GNOCCHI DI PATATE ROSSE
Didi you ever try to make Gnocchi by yourself? Perhaps the right question should be: did you ever try home made Gnocchi?? This is an amazing Italian dishes, made by the simplest ingredients that you can find everywhere: flour, potatoes, eggs!!
It has been a traditional type of Italian pasta of (probable) Middle Eastern origin since Roman times. It was introduced by the Roman legions during the expansion of the empire into the countries of the European continent. In Roman times, gnocchi were made from a semolina porridge-like dough mixed with eggs, and are still found in similar forms today, particularly the oven-baked gnocchi alla romana
Gnocchi are commonly cooked on their own in boiling salted water and dressed with various sauces depending on the type, and recipe used.
We give you our traditional recipe: now you don't have any excuse!! Let's make it!
Prep: 60min - Level: Easy - Serving: 4
- 1Kg Red Potatoes
- 200gr Flour
- Pinch of Salt
1. Bring a large pot of salted water to a boil. Peel potatoes and add to pot. Cook until tender but still firm, about 15 minutes. Drain, cool and mash with a fork or potato masher.
2. Combine mashed potato, flour and egg in a large bowl. Knead until dough forms a ball. Shape small portions of the dough into long thin loaf (just a bit bigger than your finger). On a floured surface, cut loaf into 2cm pieces.
To give to Gnocchi a different shape (see photo above) use the back of your cheese grater, put 1 piece against it, push and slide down with your finger.
3. Bring a large pot of lightly salted water to a boil. Drop in gnocchi and cook for 3 to 5 minutes or until gnocchi have risen to the top; drain and combine with your topping.
